What you can do.

1) Get a protection stone.
2) Put a block over the melon stem
3) Make a wall surrounding the farm.

Putting a block over the stem will make it not able to grow

Plants can still be trampled even when using a ps.
Solution simple: create half slabs and put the over the plant, or use fences, after that, use a ps to protect your build.

If the stem is fully matured, then the stem will give off  melons, trust me. I have an automated farm that has dirt over the stem, and it produces melons just fine.

If your plant stems are broken or griefed, call a moderator to roll them back.
