Keep the camera on at all times, then you won't die!
Well... When I'm bored, I jump into water at high places, sometimes not high. But some of the times I get fall damage when I hit the water, it's killed me a few times now, 2 on purpose, 2 not on purpose. I have yet to catch it on video because when I turn the camera on, it doesn't give me fall damage.
Yes, depending on how high you jump from, you need a deeper amount of water to absorb the damage.
That's stupid, if 1 block is 1 meter, and you can survive a 16 meter jump into only a meter-deep space of water? You'd have to be, like, god.

It depends on how deep the water is....
