I believe he means that you could place a certain block and it'd turn into a giant. I believe classic does this with grass but I'm not sure if the method can be applied to mobs.

However, giants will most likely never be add to Opticraft, since it isn't a normal mob in minecraft.

I have played on a zombie horde server where they had iron golem spawn eggs and snow golem spawn eggs. I asked the owner and they said it could be done with giants
